These Long and Slow Apples by Dorie Greenspan make a delightful. fruity dessert that are so easy to make. I’ve made them many times since this assignment as I like them for breakfast with a dollop of plain greek yogurt on top.

Two hours to bake
In the tiny little cups
Small, smashed, elegant.

cellophane cooking?
But, it is a hit.
something I will do again.
(I already hav.)
Celery root puree is the type of side dish that changes your life. Once you learn how to make it you will be serving it time and time again instead of mashed potatoes. Everyone will ask you what “what is this” and they will oooh and ahh when you tell them. Celery root puree will become your signature side dish and you will be ‘famous’ for it.

These dishes were assignments for French Friday’s with Dorie, a cooking group working its way through Dorie Greenspan’s culinary tome “Around My French Table”. Generally we are discouraged from including the recipes in our posts. Wherever there has been significant adaptation by me or where the recipe has already been publicly posted by Ms. Greenspan or her publishers I will either include it here or provide a direct link. Please also feel free to contact me via the link provided on my page if you need any assistance finding French Friday with Dorie Recipes.
I don't know what “Sis. Boom. [blog!]" means either. But, if a post makes even a small 'boom' in your day, I would be happy. Please don't call me a "foodie", or even a food blogger. I prefer "food raconteur" thank you very much. Each bite tells a story...
So thrilled to have found your blog and can’t wait to try out those Low and Slow Apples…with a giant scoop of vanilla bean ice cream on top! Looking forward to exploring much more on your beautiful site!
Very good decision to avoid the unpoplular Shrimp & Cellophane Noodles this week! We loved the apples and I need to make up the Celery Root Puree. Well, the February recipes are looking better, so fingers crossed!
What kind of meat is lurking behind your celery root puree??, that plate looks good!!!! I’m making both the celery root puree and the slow baked apples, sans saran wrap-everything on your blog looks good and inspires me to cook my way through AMFT, that’s for sure! Sorry I’m plum out of poetry this afternoon;-)
I am going to quickly comment on this Post, Trevor, because I am anxious to get to the Black Manhattans (never heard of that drink). First, I agree that Apples Long and Slow was a wonderful recipe. Lousy name. Élégant dessert. If you remember, I served my celery purée with Lobster Pot Pie on Christmas Day. You are right – that mashed potato substitute goes with anything. Your mystery meat looks delicious. We didn’t have leftovers but glad to know they are tasty. Would like to try patties – love mashed potato patties. As for this week’s wok recipe, take a pass. Seriously. Now, on to the Black Manhattans.
Puree was a hit
Celery root was a find
Apples were so slow…

I don’t like apples
So I won’t be making that
But yours looks pretty
Who am I kidding?

You had me at ‘long and slow’.
Everything is better when it is long and slow, right Marilyn?
Yep. Love my slow cooker. 😉

Hehe, love the last little one 🙂
Elegant apples
And satisfying puree –
Better than stirfry.
Gorgeous photos, Trevor!
Well done, Trevor! I enjoyed both of these, too.
